To craft a quality cheese, it's essential to acidify the milk. This process can be achieved in two ways

- Obtaining the desired acidity in milk is achievable by utilizing acids such as vinegar or citric acid.

- By harnessing the cultures and living bacteria, we can transform milk into lactic acid.

 

Adding a Coagulant - Cheese Making often involves the use of two primary coagulants: rennet, or alternatively, plant-sourced agents derived from fig tree sap and milk thistle. This Coagulant features an enzyme that binds together the proteins within milk, converting it into a solid form.

 

The process of testing the firmness of gel - Coagulants transform the proteins in milk into a gel, but it's essential to maintain its firmness by pressing on the surface of the milk. This step ensures that your cheese has achieved the correct consistency and texture.

 

Making the curd from the gel - At this point in the Cheese Making process, we take a knife, whisk or cheese harp and cut the curd into smaller cubes. A vital point to understand is that the size of the curd you cut directly affects how much moisture stays in the cheese.


Processing of the Curd - As we prepare cheese, the curd must be cooked while stirring persistently - a process that will accelerate its dehydration. Following this step, the whey must be removed from the vat and replaced with water to create a cheese that is milder in flavour and malleable in texture.
