Cranky has a cult following among Salt beer drinkers. It's a Double IIPA that drinks more like a strong pale ale. Quite dry as far as IIPA's go with a restrained bitterness and peach/grapefruit/citrus flavour profile from the hops. As we say.... you better start making excuses, because you won't be mowing the lawns tomorrow.

VIC Pale (Barrett Burston)

Munich (Barrett Burston)

Wheat Malt (Barrett Burston)

Carapils (Weyermann)

Acid Malt (Bestmalz)

Sucrose

Mashed at 65ºc

Magnum @ 60 mins

Cascade @ 10 mins

Centennial @ 10 mins

Cascade @ Whirlpool

Centennial @ Whirlpool

Galaxy @ Whirlpool

Mosaic @ Whirlpool

Yeast Suggestion

US-05

Instructions:

We use US-05 to ferment this out fully. Ensure you are using fresh, healthy yeast, and pitch a little extra if you aren't sure (the yeast has some work to do). The wort has yeast nutrients added already. Keep the temperature under control for the first few days. We pitch at 17ºc and keep it at 18ºc for a couple of days before letting it free rise near the end of fermentation. Feel free to use a less attenuative strain to take this down more of a softer NEIPA route. 


Recommended dry hop would be 10-15 g/L. If you don't use Galaxy you are missing out. We typically use Galaxy, Mosaic and one of Cascade or Centennial. Allow plenty of time for diacetyl to clean up after fermentation or consider using an enzyme like ALDC to avoid diacetyl from any dry-hop creep.


How to use the kit! 

1 – Pour the contents of the bag into your sanitised fermenting vessel.

2 – Pitch yeast as per the manufacturer’s instructions.

3 – Once fermentation has finished, proceed to bottle/keg. Carbonate and Condition.

4 – Enjoy responsibly!
