SWEET POTATO AND CHILLI SOUP RECIPE | WALLINGTON'S WRG

INGREDIENTS
1 tbsp Lighthouse Olive Oil
3 Garlic cloves minced
1 tin Diced Tomatoes
2 tsp Mild Chilli powder
2 tsp Ground Cumin
2 tsp Smoked Paprika
2 Medium sweet potatoes peeled and diced
1 tin black beans drained and rinsed (or beans of choice)
2 cups of vegetable stock
Salt and pepper to taste
METHOD
1. Heat the oil in a large pot over medium heat. Add onion and sauté until soft, 4-5 minutes
2. Stir in the garlic, tomatoes, and seasonings.
3. Add in diced sweet potatoes, beans and stock.
4. Stir well to combine. Bring the soup to a boil, and then reduce the heat and simmer, uncovered, for about 30 minutes.
5. Serve hot with toppings of choice.
