HOME BREW RECIPE - LUDWIG'S FAVOURITE UNCLE DUNKEL

Ludwig's uncle Dunkel, is the cad that has a little too much Christmas cheer, start chatting up your single cousins and spilling his drink on your mother's favourite floor rug! Made with quality Munich and German noble hops, it drinks of toasted bread and has a listing head to the very last drop. Designed to be rich in character, we've suggested double pitching on the yeast to clean the sweetness. Guaranteed to satisfy and although Dunkel is the darker lager can be removed if spilt on rugs.

Ingredients for the Ludwig's Favourite Uncle Dunkel

5.5kg - Joe White Munich Malt

170g - Weyermann Carafa Type 2 Malt

60 min - 35g Hops #1

20 min - 35g Hops #1

15 min - Whirlfloc Tablet

2 Packet - Fermentis S-23 Lager Yeast

Brew Time: 3 - 4 weeks


This kit also includes hops products, The exact flavours are a store secret. Exact Hop's names are given on the recipe card in the kit.

Instructions

Mash Schedule: 68°c for 60 mins (optional: add 5.2pH buffer to strike water)

Lauter/Sparge: Sparge with enough 75°c water to achieve 26L pre-boil volume

Boil Schedule: Boil for 60 mins, adding hops and whirlfloc as indicated.

Fermentation: Rehydrate yeast before cooling wort to 15°c, aerate wort and pitch rehydrated yeast cream. Ferment at 11°c for 2 weeks or until SG reaches 1.014, then transfer to keg/carboy/secondary fermenter to lager at 2°c for a minimum of 4 weeks before bottling or enjoying.
