Banana Bread Recipe

Ingredients

4 bananas

¼ cup vegetable oil

¼ cup unsweetened milk (Use oat, soy or almond to make Vegan Banana Bread)

½ cup brown sugar (Can substitute for maple syrup but add more flour)

2 tsp pure vanilla extract

2 cups unbleached all-purpose flour

1 tsp cinnamon

1 tsp baking soda

½ tsp salt

Sliced bananas, for topping

 

Instructions

1. Preheat the oven to 180 degrees. Spray a 9×5 loaf pan with non-stick spray, then flour.

2. In a large mixing bowl, roughly mash the bananas. Add the brown sugar, oil, vanilla, and your milk of choice then whisk to incorporate.

3. Mix in the flour, baking soda, salt, and cinnamon and stir until combined. Do not over-mix.

4. Transfer the batter to your prepared pan, and top with the extra banana slices.

5. Bake for about 45 minutes, then cover with foil and bake for 10-15 minutes longer, until a toothpick inserted in the centre comes out with just a couple of crumbs.

6. Let your bread cool before taking it out of the loaf pan.

Serve warm or cool your bread and store it in an airtight container or even freeze it for use later on.
