2.1kg - Weyermann Pilsner Malt
170g - Simpsons Pale Crystal Malt
100g - Joe White Chocolate Malt
100g - Weyermann Carafa Type 2 Malt
60 min - 50g Hops #1
20 min - 15g Hops #1
15 min - Whirlfloc Tablet
0 min -15g Hops #1
2 Packet - Fermentis Saflager S23 Yeast 11g
Brew Time: 4 - 8 weeks

Instructions
Mash Schedule: 67°c for 60 mins (optional: add 5.2pH buffer to strike water)
Lauter/Sparge: Sparge with enough 75°c water to achieve 28L pre-boil volume
Boil Schedule: Boil for 90 mins to reduce DMS, adding hops and whirlfloc as indicated.
Fermentation: Rehydrate yeast whilst cooling wort to 15°c, aerate wort and pitch rehydrated yeast cream. Ferment at 10°c or until SG reaches 1.013. Bottle or keg and allow o properly lager at 2°c for a minimum of 4 weeks, preferably 8 weeks. (optional: rack to secondary fermenter or carboy before lagering, then transfer to keg or bottle)
