Decidedly hoppy, bitter and strong for an IPA, the Hippo is two tonnes of hoppy goodness in a glass! This beer pours heady and has plenty of rounded caramel biscuit flavours which complement the trio of staple American hops added late to the kettle. A big beer for enthusiastic brewers!

5.8kg - Gladfield American Ale Malt
450kg - Joe White Cara Malt
350g - Joe White Munich Malt
110g - Simpsons Pale Crystal Malt
60 min - 30g Hops #1
15 min - Whirlfloc Tablet
10 min - 30g Hops #2
5 min - 30g Hops #3
0 min - 30g Hops 4
1 Packet - Fermentis SafAle US-05 Yeast
Brew Time: 4 - 5 weeks

Instructions
Mash Schedule: 65°c for 90 mins, mash out at 75°c for 10 mins (optional: add 5.2pH buffer to strike water)
Lauter/Sparge: Sparge with enough 75°c water to achieve 27L pre-boil volume
Boil Schedule: Boil for 90 mins, adding hops and whirlfloc as indicated.
Fermentation: Rehydrate yeast before cooling wort to 20°c, aerate wort and pitch rehydrated yeast cream. Ferment at 20°c for 2 weeks or until SG reaches 1.012, then transfer to keg/carboy/secondary fermenter to lager at 2°c for a minimum of 2 weeks before bottling or enjoying
