A typical beet garden style of beer, the Hefeweizen has a tangy, light and fruity flavour with just a touch of bitterness. An unfiltered pale wheat beer, this Hefeweizen should be partly cloudy, shining silky gold under a really strong head of foam.

Ingredients for the German Hefe-weizen
3.4kg - Best Malz Wheat Malt
1.5kg - Joe White Export Pilsner
60 min - 35g Hops #1
45 min - 20g Hops #2
1 Packet - Fermentis WB-06 Wheat Yeast
Brew Time: 3 - 4 weeks

Instructions
Mash Schedule: 55°c for 30 mins, then increase the temperature to 65°c for 45 mins (optional: add 5.2pH buffer to strike water) Mash out at 75°c for 10 mins.
Lauter/Sparge: Sparge with enough 75°c water to achieve 26L pre-boil volume
Boil Schedule: Boil for 60 mins, adding hops and whirlfloc as indicated.
Fermentation: Cool wort to 24°c aerate wort and pitch yeast. Ferment at 20°c for 2 weeks or until SG reaches 1.010. Bottle of keg and allow maturing for 3 - 4 weeks before serving.
