Wallington's Home Brewing Recipe - Classic Pilsner

Who can resist the urge for a quaffable handcrafted Pilsner? This golden goddess of the glass has been crafted to tempt all who lay their eyes upon it. The Classic Pilsener is both seductive and sultry, with just the right amount of Saaz hops to keep you coming back for more. Beware one is never enough!

Ingredients for the Classic Pilsner

4.3kg - Joe White Export Pilsner Malt

700g  - Best Malz Wheat Malt

60 min - 40g Hops #1

15 min - Whirlfloc Tablet

15 min - 40g Hops #1

0 min - 20g Hops #1

1 Packet - Fermentis W34/70 Dry Lager Yeast

Brew Time: 3 - 4 weeks

This kit also includes hops products, The exact flavours are a store secret. Exact Hop's names are given on the recipe card in the kit.

Instructions

Mash Schedule: 45°c for 10 mins for a beta-glucan rest, increase the temperature to 55°c for 10 mins for a protein rest, then raise to 65°c and hold for 45 mins. (optional: add 5.2pH buffer to strike water) Mash out at 75°c for 10 mins

Lauter/Sparge: Sparge with enough 75°c water to achieve 26L pre-boil volume

Boil Schedule: Boil for 60 mins, adding hops and whirlfloc as indicated.

Fermentation: Rehydrate yeast before cooling wort to 15°c, aerate wort and pitch rehydrated yeast cream. Ferment at 12°c for 2 - 3 weeks or until SG reaches 1.010, then transfer to keg/carboy/secondary fermenter to lager at 2°c for a minimum of 4 weeks before bottling or enjoying.
