It’s got plenty of fruit, loads of character, it’s smooth, it’s rich – it’s a bloody good red beer.

The caramel notes of this Amber Ale base and the citrus fruit hops are a surprising complement to one another in this dangerously sessionable ensemble!

Method

Give the Family Secret and LME a bath in some hot water for 20mins or so and then pour into your sanitised fermenter and dissolve in approx 2-3 litres of hot water. Top up the fermenter with cold water to 23L only, this will give a slightly higher ABV for the style.

The Morgans M44 yeast will enjoy being pitched at approx 18°C-24°C and happily ferment at this temperature.

On approximately day 5 of fermentation, dry hop with 50g Mosaic.

(A hop straining bag with a small weight can be beneficial)

After 3-4 days of dry hop and airlock activity has ceased, check for stable gravity over 2 days.

Proceed to bottle or keg. Refrigerate for 2-4 weeks before consumption.
