Ingredients

Method

Place the steeping malt into some hot water, approx 70°C for about 30 minutes. While the grain is steeping, put approx 5L of water in a large pot and begin to heat. Dissolve the Stockman’s Draught and Brewblend #20 and bring to a gentle boil. Pour the liquid from the steeping grain through a sieve and add the hops, then allow to boil for approximately 10 minutes.

Switch off the heat and get the pot into a cold water/ice bath. Put a lid on the pot as you get your cleaned and sanitised fermenter ready. With approx 10L of cold water in the fermenter, pour in the contents of your pot through a sieve.

Top up the fermenter to 23L and get the lid on. Once the temperature is at 17-20°C, pitch the Nottingham yeast and get that big, bad brew fermenting. Once the activity has ceased and gravity is stable for 2 days, proceed to bottle/keg.
